Harvest:
Manual harvest using buckets of 10 kilos, turned into 400 kilo bins to transport to the winery. The grapes were fermented in stainless steel tanks between 12 -14 c. This wine is matured on its fine lees for 1 - 4 months in stainless steel tanks. Then it is clarified, filtered and packaged. In its mixing ratio it is 100% Sauvignon Blanc.
Ageing Potential:
It is ready to enjoy now, and will continue to develop favorably in bottle for up to 5 years if stored in a cool and dark place.
Climate:
Warm and dry Mediterranean climate. Long, dry summers, temperatures moderated by cooling influence of the Pacific Ocean. Rainy winters.
Soils
Deep alluvial clay and sand, low to medium fertility.
Topography:
Hilly.
